Chitosan is obtained from chitin, which is the second most common natural polysaccharide after cellulose, by acetylation of 2-amino-2-deoxy-D-glucose unit of chitin in alkali media.
Due to Chitosan molecular structure and pK a (6.2–7.0), Chitosan is insoluble in the neutral and high pH regions. But chitosan can be protonated in aqueous solution at low pH. Therefore, the preparation of chitosan solutions usually requires acidic solvents, such as acetic acid and citric acid. The water souble chitosan (WSC) can be directly dissolved in water at neutral pH. It makes the process simpler while avoiding the use of acidic solvents. Water soluble chitosan is produced generally by substituting hydrophilicgroups onto chitosan. Adding water soluble functional groups on chitosan’s back bone,converts the polymer in an expedient form for many biological applications such as being antioxidant,antimicrobial and anticancer agent
